Recipe: Peace camp oatmeal

Peace Camp Oatmeal

I mentioned Peace Camp Oatmeal on Twitter and someone said they wanted the recipe, so I decided to post here. You should make it because it's easily the best oatmeal you'll ever have.

Back story: This recipe came from my friend's mom. She used to make it when they'd host Peace Camp up on their land in far northwestern Wisconsin. Basically, the camp was a chance for rural families from up there to camp, hang out, and talk about peace. I'm sure there's more to it than that, but that's the core.

Here's the recipe:

3/4 cup oil
3/4 cup natural maple syrup (none of that processed junk)
3 eggs (we use flax as a substitute)
4 1/2 cup oatmeal
3 tsp baking powder
1 1/2 tsp. salt
1 1/2 milk (we use a non-dairy substitute)

Instructions: Mix together oil, sugar, egg. Then mix together the rest of the ingredients and add to oil, sugar, egg mixture.

Put in a 9x13" pan. Bake at 350 for 30 mins.

It's really good if you top with fresh fruit, like berries. Mmmm.
